Fusion Cafe opened in May 2002 with a new vision for dining. The eclectic was designed to introduce tapas to Western Massachusetts by offering a wide range of flavors from different cultures around the world. The varieties of styles at Fusion includes influences from the Mediterranean, the Americas, and Asia.

Fusion Cafe features Tapas-style dining. Tapas is a form of dining originating in Spain hundreds of years ago. It encompasses traditional smaller size portions of food that are meant to be shared by the group of diners at the table. Tapas style Dining allows everyone to sample an array of flavors, tastes, and ethnic varieties at one time.

Fusion Cafe has recieved for its Creative American Fare Restaurant, and for the Best Place for Appetizers by the Advocate Best of Springfield Readers Poll 2006.
